I only recently started eating pea sprouts (aka pea shoots) a few years ago…possibly because they weren’t available at my usual grocery store or may be I just never noticed them. But I am glad I do now!
Pea sprouts are high in Vitamin C (94 mg/100 g) and a great source of dietary fiber (2.4 g/100 g). You can eat them raw by adding them in a salad, or drizzle a bit of sesame oil.
You can also quickly cook them in garlic. Cook the garlic first to your liking in a pan, turn off the heat, add the sprouts, stir a bit and you are good to enjoy this lovely microgreen! 💚 Comment below: What are some of your favorite micro-greens?
